  Sticky Toffee Pudding   Very easy - Sticky Toffee Pudding

1 cup or 226 g caster sugar
1 cup or 226 g self-raising flour - (Or plane flour with a teaspoon of baking powder)
1 cup or 226 g cup butter
3 eggs
1 teaspoon vanilla extract


Sauce:

90g butter
150g brown sugar
150g double cream



Serves: about 8 people.

For the pudding itself, combine the sugar and butter in a bowl and add the three eggs.
Fold the flour in a little at a time. Add the vanilla essence and just under half of the sauce. Mix well and pour the mixture into a suitably sized cake tin or a loaf tin. Cook at 190 degrees for approximately 20 minutes. Turn out onto baking rack to cool. Cut a slice of the sponge and pour over a generous helping of the warmed sauce. Serve with vanilla ice cream

To make the sauce.
put all the Sauce ingredients in a pan over a low heat and stir together until blended, then bring to the boil. Some of this can be poured over the sponge and finished under the grill, or it can be kept completely separate and poured over the sponge when served.

  Chicken Roulades   Chicken Bacon Roulades Recipe.

Ingredients

* 4 shallots, thinly sliced
* 10 bacon slices (about 1/2 pound)
* 4 skinless boneless chicken breast halves (about 1 1/2 pounds total)
* Lemon pepper seasoning to taste (or ground black pepper with a little lemon zest)
* 6 Tbsp grated Parmesan (about 1 ounce)
* 1 Tbps olive oil
* 1 clove of garlic, minced
* 1/3 cup dry white wine
* 2 Tbsp unsalted butter
* 1 1/2 Tbsp flour
* 1 1/4 cups chicken broth
* 1/4 cup heavy cream

  Pastry   Very easy 3 - Step Pastry.
You can substitute the cream cheese with a flavoured one if making a savory tart. ie. Herb and Garlic, Light Sundried Tomato or Light Garden Vegetable Cream Cheese.

Ingredients

* 1 1/2 cups flour
* 1/2 cup butter
* 125 g Philadelphia Cream cheese

Directions

1. Place all ingredients in food processor.whizz until mixture almost forms a ball.
2. Shape into a ball and refrigerate for 1 hour or until well chilled.
3. Roll out on lightly floured surface.

  Chocolate Mousse   * 2 cups chocolate coco powder. I use Costco!
* 12 eggs, at room temperature
* whipped cream (optional) - (Costco)

Seperate the eggs into two large bowls.

Beat the egg whites until very stiff.

Stir the coco powder into the egg yolks, beating vigorously until the mixture is smooth.

Stir one third of the egg whites into the chocolate mixture and mix until thoroughly blended.

Carefully fold in the rest of the egg whites.

Spoon the mousse into individual parfait glasses, chill and serve with whipped cream and shaved choclate if you wish.

8 to 12 servings
